Fancy (Easy) Cookies

These cookies are big, cakey, and really basically scones. That means you can have them for breakfast, ok? As a treat?

Cake mixes tend to be a little bland and a hint salty, so be generous with your flavoring, but I’d avoid adding more salt.

Ingredients

  • One box of cake mix
  • 1/2 cup of oil
  • 2 eggs
  • 2 Tablespoons of your given flavor choice
  • Up to 3/4 cup of dry mix-ins

Combine ingredients into a bowl.

Scoop onto a cookie pan with some parchment paper on top of it.

Bake for 10-12 minutes at 350 degrees.

Some favorite combos:

  • Almond Extract/Pomelo Extract/Lemon
  • Strawberry cake with orange flavor extract and crushed-up freeze-dried strawberries
  • Orange/Almond/Chocolate
  • Raid your liquor cabinet, use leftover cherry juice, whatever.


You can also make a ganache and put that on these cookies. People love white chocolate/matcha ganache. Dark chocolate/orange is also a popular combo.
