Whipped Sweet Peas

By

This is a simple side dish. It’s sweet, it’s tasty, and it’s reasonably nutritious. It’s a simple swap for mashed potatoes if you’re looking to mix things up.

It’s inspired by mushy peas, but it’s not really the same I don’t think.

Ingredients

  • 1-2 cans of sweet peas (drained, liquid deserved)
  • 1-3 tablespoons of butter (fancy butter is great here)

Since I often have this as a side with salty food, I don’t usually salt it beyond the salt the butter usually adds. Feel free to season more once you taste it, but I haven’t felt the need.

  1. Add the peas to a food processor or bullet blender.
  2. Use the machine on the peas, shaking so all get processed. It’ll be thick, you’ll probably need to do this in batches. Once each batch of peas is processed, put it in a medium bowl.
  3. (optional) warm peas however you like if eating that day.
  4. Melt your butter in the microwave. Fold melted butter into peas.
