Nettle Soup

I don’t know how to harvest nettles, go ask someone who does.

Once you get some and boil them, they lose their sting. You can then pureé them with some of the water you cooked them in, maybe in a little bullet blender.

So now let’s say you find yourself in possession of nettle pureé. What can you make with it? You could make this soup.

Ingredients

  • 1 cup nettle pureé
  • 1/4 cup mushroom paste
  • 1 tablespoon Better Than Bullion Roast Garlic  stock concentrate
  • 1/8 cup onion powder
  • 1/8 cup potato flakes
  • Some milk, cream, coconut cream.. some kind of fatty creamy thing
  • Extra butter, sour cream, something like that would probably be tasty to top it with

Combine the above ingredients in a sauce pan. Do not salt.

Add water equal to 1.25-2 x their volume.

Cook it together and add some of your milky ingredient.

Once it’s hot, you can serve it in bowls and cool it with more milk.
